Green Tea, Lemon & Ginger Chews

ngredients:
3/4 cup / 180 ml cold water
5 tablespoons unflavored gelatin powder
1/2 cup strongly brewed green tea (use 4 tea bags)
1/3 cup / 80 ml ginger juice
1/4 cup / 60 ml fresh lemon juice or preservative-free bottled lemon juice
Optional: honey, to taste
Instructions:
Pour the cold water into a saucepan and sprinkle the gelatin powder over the surface. Allow it to bloom and dissolve while you prepare the other ingredients. Set it aside.
Brew the green tea according to the steeping instructions. Remove the tea bags, ensuring you have 1/2 cup of brewed tea.
Add the brewed tea, ginger juice, and lemon juice to the saucepan with the bloomed gelatin. Warm the mixture gently while stirring until the gelatin is completely dissolved and free of lumps. Be careful not to overheat. If desired, add honey at this stage.
Carefully pour the mixture into molds or a baking dish. Place it in the refrigerator for at least 2 hours to set. Once firm, remove from molds or cut into bite-sized pieces.
